Instructions

  1. Heat oil in medium saucepan over medium-high heat. Add carrot, celery, onion, bell pepper, paprika, cumin, and turmeric; cook, stirring frequently, for 5 minutes, or until tender. Add quinoa, lentils, zest, lemon juice, and parsley to cooked vegetables; heat over medium heat for 2 to 3 minutes, or until heated through. Fluff with a fork and serve.
  2. Cooked Quinoa--- Bring 2 cup water to boil. Rinse 1 cup quinoa. Add to boiling water, cover and simmer on low for 15 mins. Remove from heat and let sit for 5 mins. Fluff with fork. Store left overs in a sealed container in the fridge. Cooked Lentils--- Boil 2 cups of water. Add 1 cup dried lentils to water. Reduce heat and simmer (uncovered) on low for 20-30 mins (until no longer crunchy). Store left overs in a sealed container in the fridge.
