Place 1 can of coconut milk in the fridge overnight, gently flip over and open can from the bottom. Drain liquid into a small cup, save for later. Whip the solidified coconut milk in a bowl with a handmixer on high speed until it is the consistency of whipped cream.
Add leftover liquid as neccessary for the right consistency.
Add vanilla and sugar and blend.
